Calamari with Stir Fry Vegetables



Ingredients
  • 120g calamari rings (not crumbed)
  • 1cm ginger, peeled and thinly sliced
  • 1 medium zucchini, thinly sliced
  • 1 cup sliced mushrooms
  • 2 teaspoons lemon juice
  • 1 small chicken stock cube
  • 1 tablespoon soy sauce
  • ½ cup water
Method

Heat wok and stir fry zucchini and mushrooms. Add ginger and calamari and stir fry for 2 minutes. Remove from wok and keep warm. Mix together remaining ingredients to make a sauce. Pour into wok and cook quickly until slightly reduced. Serve over the calamari and vegetables.
