Soba Noodles with Fish and Vegetables

Ingredients
  • 150g White firm fish
  • 40g Soba noodles
  • 1 clove of garlic, crushed
  • 1 long red chilli sliced
  • 1 Teaspoon grated ginger
  • 100g button mushrooms, sliced
  • 1 bunch baby Bok Choy.
  • 2 Tablespoons Oyster sauce
  • 1 cup chicken stock
  • 1 green onion sliced
Method

Cook Soba Noodles in boiling water for 6 mins. Drain.

Heat a non stick fry pan and add garlic, chilli, ginger and stir fry for 1 min.

Add mushroom and cook for 3 mins, add the noodles, Bok Choy and oyster sauce and stir for 1 min and stock and fish and bring to a simmer for 2 mins.

Place into large bowl and serve.
