Fish Parcels with Julienne Vegetables and Asian Noodles

Ingredients
  • 150g white fish fillet
  • ½ carrot cut into fine match sticks
  • 2 celery sticks cut into fine match sticks
  • ½ teaspoon dried tarragon
  • 1 large lettuce leaf

Stock:

  • 1 ½ cups chicken stock
  • 2 sprigs of parsley
  • 1 stick celery

Method
Drop lettuce carefully into boiling water for 30 seconds and drain on kitchen paper.

Place the piece of fish onto the lettuce leaf, sprinkle with tarragon and season with salt and pepper.

Fold lettuce sides over fish and roll up carefully into a parcel.

Place parcel into a pan and pour over stock.

Bring to a gentle simmer and cook for approx 6 mins.

Add carrots and celery and cook for a further minute.


Asian Noodles

  • 40g Soba noodles
  • 1 Tablespoon soy sauce
  • ½ Tablespoon Rice wine vinegar
  • ¼ Tablespoon sesame oil
  • 1 finely sliced red pepper

Bring a small pot of water to the boil and cook noodles until soft.

Drain. In a bowl stir soy mixture through the soba noodles.

Place noodles in a bowl and place fish parcel on top along with vegetables.
