Fish with Mexican Vegetables

fish with mexican vegetables

Ingredients
  • 150g firm white fish
  • 2 teaspoons lime juice
  • ½ red onion, finely sliced
  • 1 clove garlic, crushed
  • ½ red capsicum, cut into strips.
  • 100g tinned tomatoes
  • 1 zucchini, thinly sliced
  • Fresh coriander
Method 

 Sprinkle lime juice over fish.

Heat non stick pan and cook onion and garlic until soft. Add capsicum, zucchini, tomatoes,and salt and pepper to taste.

Sprinkle a ¼ of a teaspoon of chilli powder over vegetables and cook for 1min. Pour over fish and bake in the oven at 180°C for 10 mins.
