Thai Pork with Noodles

Ingredients
  • 40g Vermecilli Rice noodles
  • 120g Pork Mince
  • ½ Onion very finely sliced
  • 1 Long red Chilli, deseeded and sliced
  • 1 Lemongrass stalk, very finely sliced
Method

Pour boiling water over Rice noodles and allow to soften for 10 mins. Drain.

Heat Wok over a high heat, add mince and stir fry until golden and cooked through. Place hot cooked mince into bowl and add onion, chilli and Lemongrass and mix through.

Mix 1 tablespoon fish sauce, 1 tablespoon lime juice and 1 tablespoon of mint together. Pour over Pork Mixture. Toss through noodles and serve.
