Chicken and Tomato Casserole

Ingredients
  • 120g chicken tenderloins (approx. 4)
  • 200g tomato puree
  • 1 onion, sliced thinly
  • 1/2 green capsicum, roughly chopped
  • 1/2 cup mushrooms, sliced
  • 1 teaspoon dried basil
Method

Pre-heat oven to 150C.In a non-stick fry pan, gently fry onions.Add basil and stir. Add tomato puree and stir. Simmer for 5 mins. Place chicken in casserole dish and pour tomato mix over.Add green capsicum and mushroom. Place lid on casserole and cook in the oven for 30 mins.
