Chicken Salad with Snow Peas & Broccoli

Ingredients
  • 120g chicken tenderloin (approx 4)
  • 100g snow peas, blanched
  • 125g broccoli flowers, blanched
  • ½ green pepper, sliced
  • 2 spring onions, sliced

Dressing:

  • ¼ cup lemon juice/lime
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped parsley
  • 1 teaspoon grated ginger
  • ¼ cup water
  • ½ teaspoon sesame oil
Method

Poach, steam or microwave chicken. Drain and cool.

Mix chicken with vegetables in a bowl. Whisk together ingredients for the dressing.

Pour over, toss, and serve.
