Easy Beef Stroganoff

Beef stroganoff

Ingredients
  • 120g beef strips
  • ½ onion, finely chopped
  • 1 clove of garlic crushed
  • 1 Teaspoon dried oregano
  • 1 Tablespoon red wine vinegar
  • 150g mushrooms, sliced
  • ½ cup low fat ricotta
Method 

Heat non stick frying pan.

Brown beef, add onion and garlic and cook until tender.

Stir in mustard, oregano and vinegar, add mushrooms and cook until soft. Stir through ricotta until warm. Serve with ½ cup cooked ribbon pasta (pappadelle).
